More! Chef Joe Flamm

Joe Flamm, winner of Bravo’s Top Chef Season 15, will open his debut restaurant, Rose Mary, with Sancerre Hospitality in Chicago’s Fulton Market District in early 2021. Blending classic and timeless dishes from his Italian heritage with bold and vibrant flavors from the Croatian coast, Joe will utilize a charcoal hearth and an abundance of seasonal ingredients to create a menu focusing on what he describes as “Adriatic drinking food”.

Most recently, Joe worked as the Executive Chef of Chicago’s Michelin-starred Spiaggia and Café Spiaggia for 5.5 years. There, he learned from and cooked with James Beard award-winning Chef Tony Mantuano—the Godfather of Italian fine-dining in America—who is forever family.

Prior to Spiaggia, Joe worked in other iconic Chicago kitchens, beginning with his Grandma Mary’s. She taught him how to cook pastas, ravioli, and pizzas—all made by hand—for their large Italian family.

Joe refined his culinary skills alongside Chicago’s best chefs, including Stephanie Izard at Girl and the Goat, Art Smith at Table Fifty-Two, and Bill Kim at bellyQ. Joe has also staged in some of Italy’s most renowned kitchens, including Glass Hostaria in Rome and Del Pescatore in Mantova, a truly magical place.

While Joe has cooked for presidents, celebrities, the James Beard Foundation, and more, his favorite person to cook for is his wife, Hillary. In his free time, Joe enjoys #dayoffing with Hillary and their son, Luka.
